Veggie Cheese Chowder


3 c. fresh broccoli-cut in bite size pieces
2 c. milk
½ c. shredded carrot-1 med carrot
1 can chicken broth
½ c. water
1 ½ c. shredded cheddar cheese
2 TBS snipped fresh parsley
1/8 tsp pepper
1/3 c. flour

In medium saucepan combine broccoli, carrot, and water. Bring to boil; reduce heat. Cover and simmer about 4 min. Do not drain! Cut up any large pieces of broccoli. Wisk together milk, flour, and pepper; add to saucepan. Stir in broth. Cook and stir till thickened and bubbly. Stir in shredded cheese and parsley. Cook and stir low heat till cheese is melted and chowder in heated through.


I serve with ham and cheese sandwiches and a salad!

Sweet and Sour Chicken

1 egg
½ tsp garlic
½ cup cornstarch
½ cup chicken broth
1 TBSP oil
¾ cup sugar
¼ cup vinegar
1 TBSP soy sauce
1-6 chicken breast (cut in 1” chunks)

Beat egg in a bowl. In a separate bowl combine garlic and cornstarch. Dip chicken first in egg and then cornstarch mixture. Brown chicken in oil in a frying pan on both sides. Place in baking dish. To prepare sauce, combine broth, ketchup, sugar, vinegar, and soy sauce. Pour over chicken and bake at 375 for 40-45 minutes. Serve over rice.

Roast Chicken

2 whole chickens about 4 lbs each
1 onion
1 lemon
4 tsp salt
1 tsp white pepper
½ tsp cayenne pepper
1 tsp onion powder
1 tsp dried thyme
½ tsp black pepper
½ tsp garlic powder
2 tsp paprika

1. In a small bowl, mix together all spices. Remove and discard giblets from chicken. Rinse chicken cavity and pat dry with a paper towel. Rub each chicken inside and out with spice mixture. Stuff with onion and lemon slices. Place chickens in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4-6 hours.

2. Preheat oven to 250 F

3. Place chickens in a roasting pan. Bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees. Let chicken stand 10 min before carving

SOOOO good!!!When the whole chickens go on sale for 59 cents a pound, I buy as many as I can. I always cook 2 at a time. One, we eat that night and use leftovers for salads and sandwiches. The other cooked chicken I shred up and put into freezer bags to use in casseroles that month (like chicken broccoli, chicken enchiladas, stuffed quesadillas…)It’s a great way to save time and $ and tastes great.

Crockpot Potato Soup

6 medium potatos peeled and quartered
1 onion chopped
2 carrots sliced
1 stalk celery sliced
4 bullion cubes
5 cups hot water (mix with bullion cubes till dissolved)
1 tsp salt
1 TBSP dried parsley
1/3 cup butter
Pepper to taste
1 can evaporated milk (13 oz.)
Cornstarch to thicken
1 cup of frozen corn

Shredded cheese
Bacon pieces

Put everything in crockpot except milk, cornstarch, frozen corn, cheese, and bacon. Cook on low 8 hours. 1 hour before done put in the milk (and mix about 4 tbsp cornstarch with a little of milk before pouring in to thicken soup) and add the frozen corn. Serve with the shredded cheese, cooked bacon pieces and bread and salad.

Meatball Sandwiches

Meatballs
Hoagie rolls
Spaghetti sauce
Mozzarella cheese

Put meatballs in the sauce, heat up. Put mozzarella cheese on rolls open rolls and broil for a few minutes. Put meatballs on rolls and serve with chips, fruit salad, and veggies and dip. I like to make the meatballs in the morning and then plop them in the pot with spaghetti sauce and put it in the fridge till right before dinner

Meatballs
11/4 lb ground beef
½ cup breadcrumbs
½ cup kraft parmesan cheese
1 egg
1 tsp worchestire sauce
Salt and pepper
Shake of garlic powder

Mix together and form balls (I make mine about the size of a golf ball). Place on baking sheet with edges and bake at 450 for 10-15 min depending on meatball size. Let them cool for a few minutes then add to a pot of spaghetti sauce.

Sweet Grahams

Updated Shepherd's Pie

I've always hated shepherd's pie and I really like this.

1 1/4 lb red potatoes
3 gloves garlic
3/4 c. sour cream
1/2 c. shredded cheddar cheese
1 lb ground beef
2 TBS flour
4 c. frozed mixed veggies
3/4 c. beef broth
2 TBS ketchup

1. Cover potatoes and garlic - bring to boil. Drain, add sour cream and mash. Stir in 1/4 c. cheese.
2. Preheat oven 375. Brown meat. Stir in flour; cook 1 min. Add veggies, broth and ketchup. Cook 5 minutes.
3. Spoon mixture in 8x8 dish. Cover with mashed potaotes. Bake 18 min - sprinkle 1/4 c. cheese on top and bake another 2 minutes.

Megan's Lasagna - EASY & YUMMY

9 lasagna noodles
1 16 oz. cottage cheese
1 26 oz. spaghetti sauce
1 lb hamburger
2 eggs
seasoning salt
grated cheese

1. Boil noodles
2. Brown hamburger and add spaghetti sauce
3. In bowl combine eggs, cottage cheese, & seasoning salt
4. In 9x13 pan layer 3 noodles, 1/3 of hamburger mixture, and 1/2 cottage cheese mixture. Spinkle with cheddar cheese. Then layer again. End with noodles, hamburger mixture and cheese.
5. Bake 375 for 30 minutes - covered

Pretend Swiss Steak

I don't know why it's called this but our mom used to make it growing up

1 lb ground beef
1/2 c. flour
2 c. water
2 beef bouillon cubes
salt and pepper

Thaw out hamburger and salt and pepper. Divide into 4 patties. Coat with flour and brown on both sides. (I use oil in an electric skillet) Boil water and add cubes. Pour over meat. Simmer 15 minutes or until cooked. Take patties out and add flour to juice to thinken for gravy. Add patties back in and heat through. Serve with mashed potatoes.

All In One Cheesy Chicken and Rice

1 can cream of chicken
1 1/3 c. water
3/4 c. uncooked rice
2 c. frozen veggies
1/2 tsp onion powder or seasoning salt
1/2 tsp pepper
2 chicken breasts cut in half
1/2 c. shredded cheddar cheese

Stir soup, water, rice, veggies, and seasonings in 2-1/2 qt dish. Top with chicken. Bake 375 for 45 min-1 hr (depending on thickness of chicken) or until juices run clear. Top with cheese.

Chicken Stuffing Casserole

4 c. cooked chicken
1 box stuffing mix - prepared
1 can cream of chicken
1 c. sour cream
1/2 c. milk

Prepare stuffing. Add milk, sour cream, cream of chicken and cooked chicken. Bake in 9x13 pan covered with foil at 350 1 hour.

Swiss Chicken

8 chicken breasts
8 slices of swiss cheese - I used provolone and is was really good too
1 can cream of chicken
1/2 c. water
2 c. stuffing mix

Put thawed out chicken in dish. Place cheese on top. Stir soup and water together. Pour over chicken. Sprinkle with stuffing mix. Bake at 350 covered about 1 hour.

Jessi's Chicken Stir Fry

1 bag frozen veggies
1 or 2 chicken breasts
seasoning salt
1 cup water
2 tsp. cornstarch
seasame seeds
1 glove garlic
1-2 TBS soy sauce

1. Cut up chicken in small pices. Cook in big electic skillet. Sprinkle with lawrys seasoning salt.
2. When chicken is cooked add frozen veggies, let cook.
3. Mix water, cornstarch, seasame seeds, garlic, and soy sauce. When veggies are soft stir sauce with a fork and pour over veggies and chicken. Simmer for about 10 minutes. Add a little more soy sauce if desired.

** Sometimes I skip the garlic and just add some more seasoning salt or garlic powder into the sauce.

Kid Friendly Chicken Enchiladas

3 chicken breasts
1 taco seasing pkt
water recommended for taco pkt
1 c. sour cream
1 can cream of chicken
8 tortillas
1/2 c. grated cheddar cheese
1 can red enchilada sauce

Brown chicken in pan. Add taco seasoning and water. (or you can boil the chicken, drain and then add taco seasoning and water) Cook for amount of time on seasoning pkt. Add sour cream and cream of chicken. Fill torillas with creamy mixture and place in 9x13 pan. Pour red sauce over top. Bake 350 for about 30 mintues. Add cheese last 10 minutes of baking.

Chicken Salad Sandwiches

3-4 chicken breasts
1 cup diced celery
2 cups grapes, halved
1 cup diced apples
2 TBSP minced onion
¼ cup silvered almonds

Dressing:
½ cup mayonnaise
½ cup sour cream
1 Tbsp lemon juice


Mix dressing ingredients and put in refrigerator. Boil chicken, and cut in bite-sized pieces and cool. Add chicken and celery, grapes, onion, and almonds to dressing and mix well. Serve on warmed croissants.

EASY VERSION
Mix one can cooked chicken with mayo. Add grapes, celery, apples, almonds. Serve on crouissants

FETTUCCINE WITH CHICKEN AND SUN-DRIED TOMATOES

2 or more cloves garlic
1 medium onion, chopped
3 boneless skinless chicken breasts, cut into 3 inch strips
1 cup fresh basil, chopped
1 cup sun dried tomatoes, packed in olive oil
1 lb fettuccine
Olive oil from sun dried tomatoes

Over medium heat, sauté onion until golden and wilted for about 10 minutes, then add garlic and cook for a few more minutes (but do not allow garlic to burn). Add chicken strips and brown, stirring frequently. Add basil and sun dried tomatoes (save the oil) to skilled and sauté for another minute or two. Cook pasta according to directions, then drain. Toss hot fettuccine and sauce together in a serving bowl and add the olive oil from the sun dried tomatoes. Add salt and pepper to taste (serves 5)

Sun-dried tomatoes: Slice roma tomatoes and spread on an oiled cookie sheet. Place in the oven overnight at 200 degrees and into the next day, checking them until they look and feel like dried apricots. Let cool. Put in a clean jar, cover with olive oil, and add a clove or two of garlic. Refrigerate.

CHICKEN BROCCOLI

3 chicken breasts
2/3 c. mayo
2 cans cream of chicken
2 10oz. broccoli pkg or fresh broccoli cooked crip
1/3 c. milk
1/2 c. grated cheddar cheese

Place cooked or frozed broccoli at bottom of 9x13 pan. Put cooked chicken layer over top. Mix together remianing ingredients and pour over top. Bake 350 for 20-30 min till bubbly.

Serve over Rice or noodles

Chicken Roll Ups


1 can cooked chicken
4 oz. cream cheese
2 TBSP butter
1 pkg. crescent rolls
½ c. butter, melted
Stove Top Stuffing Mix

Sauce
1 can cream of chicken
1/2 c. sour cream
1 Tbsp lemon juice (optional)

Mix cream cheese and 2 TSB butter. Add chicken. Place a small amount in each roll. Dip in melted butter and roll in stove top stuffing mix. (recipe has been cut in half)
Bake at 375º for 20 min. Serve with rice and sauce

Creamy Crockpot Chicken

1 cans Cream of Chicken Soup
1/2 pkg. Italian dressing mix
4oz. pkg. cream cheese softened
3 Chicken Breasts

In crockpot, place chicken breasts along the bottom. Mix dressing mix and ¼ cup water, pour over chicken. Cook for 3 hours on low. Mix cream cheese and soup until well blended and pour in and cook 1 more hour.
Cook on low for 4-6 hours serve over rice.

Chicken Pasta Salad

Curly Noodles
Cooked Chicken
Frozen Corn
Diced Cheese
Ranch or Italian Dressing

Fry up the chicken and sprinkle on Lemon Pepper or other yummy seasoning. Cook the noodles and when almost done add the frozen corn. Drain and rinse in cold water. Add the chicken and the diced cheese and keep in fridge until ready to eat. Add favorite dressing (RANCH)

We serve with rolls and salad

Fruit Pizza

Dough:
1/4 c. Shortening
1/2 c. Sugar
1 egg
1/2 tsp. Vanilla
1/2 tsp. Baking Powder
3/4 c. Flour
1/2 pkg Danish Dessert (see below for instructions on how to prepare)
4 oz Cream Cheese
1/4 c. Sugar
1/2 tsp. Salt

Mix shortening, sugar egg, and vanilla. Blend with mixer then add flour, baking powder, and salt. Cover and chill in freezer for 10-15 min. Press into sprayed pizza pan. Crust will be very thin. Roll or curl up edges to prevent edges from burning. Bake at 375 for 6-12 minutes.

Mix sugar and cream cheese with mixer and spread over cooled crust. Spread prepared Danish Dessert over cream and top with fruit.

To prepare danish dessert: Pour 1/2 package into a small saucepan and add 1 1/4 cups of cold water. Bring to boil and boil on high for 1 min. Take away from heat and let cool.

Callie's Cookies

¾ cup brown sugar
¾ cup white sugar
½ cup butter
2 eggs
1 tsp. vanilla
2 ¼ cup flour
1 tsp baking soda
1 tsp salt
1 cup Heath bits
1 cup White Chocolate chips


Cream together butter and sugars. Gradually add eggs and vanilla. Combine baking soda, flour, and salt. Stir in wet mixture. Stir in toffee bits and chips. Drop by spoonfuls on ungreased cookie sheet. Bake at 350 for 8-10 minutes.

OATMEAL BUTTERSCOTCH COOKIES

½ cup butter
½ cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 ½ cups flour (plus a little)
2 cups quick oats (plus a little)
1 tsp baking soda
1 tsp salt
1 cup butterscotch chips


Beat together shortening and sugars until smooth. Add eggs and vanilla. Add flour, soda, and salt. Slowly add oatmeal. Stir in chips. Bake at 350 for 10 minutes

Snickerdoodles

1 ½ cup sugar
½ cup margarine
½ cup shortening
2 eggs
2 ¾ cup flour
2 tsp cream of tartar
1 tsp baking soda
¼ tsp salt
3 Tbsp sugar
3 tsp cinnamon


Mix sugar, butter, eggs, and shortening. Stir in flour, cream of tartar, soda, and salt. Shape dough into balls and roll into cinnamon and sugar mixture. Bake at 400 for 8 to 10 minutes and remove immediately from cookie sheet.

Cake Mix Cookies

1 box cake mix
1/3 c. oil
1/8 c. water
1 egg


Mix together. Bake 375 8-10 minutes.

Favorites: Rainbow Chip, Cherry Chip, Choco with sprinkled powdered sugar on top.

CHEWY SUGAR COOKIES

3 ½ cups flour
1 tsp baking powder
½ tsp salt
1 cup butter
1 ½ cups sugar
2 eggs
1 ½ Tbsp vanilla


Cream wet ingredients. Mix dry. Combine. Roll out thick on floured board
With wax paper. Cut into desired shapes. Bake at 400 for 5-8 minutes. Remove feom oven when you see any hint of brown.

*These are supposed to be thick and chewy...YUMMY!

Traditional Muddy Buddies

9 c. chex
1/2 c. peanut butter
1/2 pkg choco chips
1/4 c. butter
1 tsp vanilla
1 1/2 c. powdered sugar

Measure cereal, set aside. Melt choco chips, peanut butter, and butter. stir until smooth. Stir in vanilla and then pout over cereal. Stir until evenly coated. Pour into large ziplock bag and add powdered sugar. Shake till evenly coated and enjoy!

Banana Pudding Cake

1 1/2 c. Graham Cracker crumbs
1 1/4. c. sugar, divided
1/2 c. butter
2 pkg crem cheese, softened
6 medium bananas
2 c. cold milk
2 pkg instant vanilla pudding
2 c. thawed cool whip
1 c. chopped pecans

Mix crmbs, 1/4 c. sugar, and butter. Press into bottom of 13x9 pan. Freeze 10 min. Beat cream cheese and remaining 1 c. sugar in bowl with mixer. Carefully spread cream cheese mixture over crust. Slive 4 bananas and arrange over top. Pour milk into large bowl and add pudding. BEat with wire whisk 2 min. Stir in 1 c. whipped topping and spread over banana layer. Op with remaining whipped topping, sprinkle with pecans. Refrigerate a few hours and slice remaining banans on top before serving.

Cherry Dream Squares

1 pkg white cake mix
1 1/4 c. rolled oats
6 TBS melted margarine
1 egg
1/3 c. water
21 oz. can cherry pie filling
1/2 c. chopped pecans
1/4 c. brown sugar
2 TBS margarine

1. In large bowl combine cake mix, 6 TBS maragine & 1 c. oats. Mix with fork till crumbly. Remove 1 c. crumbs for topping, set aside.
2. To remaining crumbs add 1 egg and water. Mix and press into prepared 10x9 pan for crust.
3. Pour pie filling over crust.
4. To reserved crumbs add 1/4 c. oats, 2 TBS margarine, nuts, and brown sugar. Mix again with fork till crumbly. Sprinkle over cherry mixture.
5. Bake 30-40 min or until golden brown.

Broccoli Salad

1 large head broccoli - cut
1/2 lb bacon - crumbled (or use real bacon bits)
1/2 c. seedless red grapes cut in 1/2
1/2 c. small red onion - chopped


Dressing
1 c. mayo
1/2 c. sugar
1 TBS white vinegar
1/2 c. sunflower seeds

Cold Pasta Salad

1 16 oz. rainbow rotini
1 Green pepper - chopped in small pieces
1 Celery Stalk - chopped in small pieces
1/2 c. Cheese blocks
1 c. fresh broccoli - in small pieces
1/2 bottle italian dressing

Cook pasta and add everything else. Toss with dressing and chill.

Carmel Apple Salad

1 8 oz. frozen whipped toppping, thawed
1 4 oz. pkg instant butterscotch pudding
1 8 oz. can crushed pineapple with juice
3 c. diced apples, green are the yummiest
1 c. chopped pecans
1 c. mini marshmallows

Mix cool whip, pudding, and pineapple. Add apples, nuts, and marshmallows.

No Cottage Cheese Pistachio Pudding Salad

1 small can crushed pineapple
1/4 c. slivered almonds
1/2 bag marshmallows
1 tub cool w hip
1 box pistachio pudding
1 3/4 c. milk

Mix pudding with milk and let sit 5 min. Add all other ingredients to desired consistency.

**This is also made often with cottage cheese inside, I just don't like cottage cheese so this is my version.

Easy Yummy Nachos

1 bag nacho cheese doritos - or any other chips, these are just my favorite
salsa
grated cheddar cheese
refried beans

Sorry, no measurements here, have always done this by whatever looked good. If you come up with good measurements be sure to add them!

1. Mix together salsa and refried means.
2. Layer chips, glop on mixture, and sprinkle cheese. Repeat one more time.
3. Bake at 350 for about 10 minutes till cheese is melted.

I serve with tacos.

No Bake Cookies

2 c. sugar
1 stick margarine
1/2 c. milk
3 TSB coco
3 c. quick oats
1 tsp. vanilla
1/2 c. peanut butter

Mix sugar, milk, margarine, and coco in pot. Bring slowly to a boil and boil hard for 1 minute. Remove from heat and add oats, peanut butter, and vanilla. Drop by spoonfuls onto wax paper or foil. Let dry.

Banana Bars

For those of us who want to make banana bread but just never have luck with bread...

1 1/2 c. sugar
1/2 c. butter (or substitue for applesauce for lower fat)
1 c. sour cream
2 tsp. vanilla
2 eggs
1 1/2 c. smashed bananas
2 c. flour
1 tsp salt
1 tsp baking soda


Mix together wet ingredients first. Then add flour, salt, and soda. Grease pan and put in jellyroll pan or what I call a cookie sheet with sides on it. Bake 375 for 20-25 minutes.

GLAZE: Butter, milk, powdered sugar, and vanilla to make whatever consistency you like

Bacon Cheese Pull Aparts


1 egg
2 TBS milk
1 can flaky biscuits
1/4 c. real bacon bits - or you can cook bacon and crumble it
3/4 c. shredded cheddar cheese
1/4 c. finely chopped green onion - optional

Heat oven 350. Spray a 2 qt glass baking dish with cooking spray. In large bowl beat egg and milk with wire whisk. Separate dough into 8 biscuits and cut each into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in bacon, cheese, and onions. Spoon mixture into sprayed dish. Arrange biscuit pieces in single layer. Bake 350 for 23-28 minutes or until golden brown. Cut into squares.

German Pancakes


1 cup milk
1 cup flour
6 eggs
1 tsp salt
1/4 c melted butter
1 tsp vanilla

Pour melted butter in 9x13 dish. Beat everything else and pour over top. Bake at 350 for 40 minutes.

Easy Peach Cobbler

2 cans peaches, drained - save juice
1/2 tsp cinnamon
1/2 pkg cream cheese
1/2 c. butter
1 white or yellow cake mix

Spread peaches in 9x13 pan. Pour 1 c. juice over peaches. Sprinkle cinnamon on top. Cut cream cheese and butter into cake mix, pour over top. Bake 45 min. at 350.

Pudding Dessert - Travis's fave

1 c. flour
1 c. finely chopped nuts
1 cube margarine
1 8 oz pkg cream cheese
1 c. powdered sugar
1 container cool whip
1 pkg instant vallina pudding
1 pkg instant choco pudding

Cut butter into flout and add nuts. Pat into 9x13 pan, bake 20 min. 325 for glass pan, 350 for tin.

Prepare pudding. Mix together and set aside. Beat cream cheese and sugar. Fold in 1 cup cool whip. Layer on top of cooled crust. Then layer pudding. Then layer reminaing cool whip. Garnish with grated choco or score bar chunks.

Vegetable Pizza

2 (8 ounce) packages refrigerated crescent rolls
2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (1 ounce) package dry Ranch-style dressing mix
1 cup fresh broccoli, chopped
1 cup chopped tomatoes
1 cup chopped green bell pepper
1 cup chopped cauliflower
1 cup shredded carrots
1 cup shredded Cheddar cheese

Preheat oven to 375 degrees F (190 degrees C).Roll out the crescent roll dough onto a 9x13 inch baking sheet, and pinch together edges to form the pizza crust.Bake crust for 12 minutes in the preheated oven. Once finished cooking, remove crust from oven and let cool 15 minutes without removing it from the baking sheet.In a small mixing bowl, combine cream cheese, mayonnaise, and dry Ranch dressing. Spread the mixture over the cooled crust. Arrange broccoli, tomato, green bell pepper, cauliflower, shredded carrots, and Cheddar cheese over the cream cheese layer. Chill for one hour, slice and serve.

Yummy Pumpkin Bars

Bars
1 c. oil ( I do half oil and half applesauce)
4 eggs
2 c. sugar
1 tsp vanilla
1 can pumpkin – the smaller one, about 2 cups
2 tsp cinnamon
2 c. flour
1 tsp baking soda
1 tsp salt

Frosting
3 or 4 oz. cream cheese
1 stick margarine
2 c. powdered sugar
1 tsp vanilla
thin with milk

Cream oil, eggs, and sugar. Add vanilla and pumpkin. In another bowl sift dry ingredients. Add to wet mixture. Pour mix into greased cookie sheet. Bake 20 minutes at 350. Frost with frosting and they are very yummy! It’s like Texas Sheet Cake but it’s Texas Pumpkin Cake.

Pretzel Salad - best one I've tasted!

2 c. crushed pretzles (blender works best)
3/4 c. margarine, melted
2 tsp white sugar
1 8oz. pkg cream cheese
3/4 c. white sugar
4 1/2 oz frozed whipped topping, thawed
1 6oz. pkg raspberry jello
2 c. boiling water

1. Preheat over 400
2. In medium bowl, mix crushed pretzles, margarine, and 2 tsp. sugar
3. Press pretzel mixture into bottom of 9x13 dish and bake 8 minutes. Allow to cool.
4. Blend cream cheese and 3/4c. sugar. Fold in whipped topping and spread over cooled pretzel crust.
5. In medium bowl, dissolve jello in boiling water.
6. Pour geletin mixture over cream cheese and refrigerate until set, about 4 hours.

**I used the speed set method and it worked great, goes in fridge for only 1.5 hours
**You can add some raspberries into the jello too, that tasted yummy and added more texture.

MINISTRONI SOUP

2 c. vegetable or chicken broth
2 c. tomato juice – canned
½ TBS dried basil leaves
¾ tsp salt
¼ tsp oregano dried
¼ tsp pepper
2 medium carrots sliced (about 1 cup)
2 medium celery stalks (about 1 cup)
1 medium onion chopped (about ½ cup) – I do less than this, maybe ¼ c.
2 medium potatoes cubed
1 clove of garlic – finely chopped
1 14 oz. can diced tomatoes – undrained
Stewed beef - I only do half of what I buy so it lasts longer, but you can do the whole thing
¾ c. pasta – rotini

Mix all ingredients except pasta in a slow cooker. Cook on low 7-8 hours or until veggies are tender and meat is cooked. 15-20 minutes before serving, stir in pasta and turn on high.


Serve with cornbread!

REBECCA’S ROLLS & SCONES

1 cup milk
1 cube margarine
1 tbs sugar
½ c sugar
1 ½ tsp salt
½ cup warm water
2 Tbsp yeast
2 eggs
5 cups flour (closer to 6)

Combine warm water, yeast and sugar. Let sit – in different bowl
Scald milk (microwave 3 min maybe) and Pour over margarine (let hot milk melt butter 5-10 min) and sugar and salt. Let melt – in mixer
Add yeast water and eggs to milk mixture.
Add flour to kneading consistency. (with kitchen aide leave in there to rise) 3c. with beaters
Let rise 30 min.

Rolls: Form desired roll shape let rise 15 min and bake for 20 min at 350.
Roll out like pizza – 3 balls and cut 8-16 crescent roll - tip down on baking sheet

For Scones: Fry in oil. Maple Frosting – 2 cups powder sugar, 2 tsp margarine, 1 tsp maple extract, and a tiny bit of milk. Mix till a gooey consistency.

SOFT, MOIST AND GOOEY CINNAMON BUNS

3 Hours 35 Minutes

1 cup milk 1 egg, beaten
4 tablespoons melted butter
4 tablespoons water
1/2 (3.5 ounce) package instant vanilla pudding mix
4 cups bread flour
1 tablespoon white sugar
1/2 teaspoon salt
2 1/4 teaspoons bread machine yeast

1/2 cup butter, softened
1 cup packed brown sugar
2 teaspoons ground cinnamon

1 In a bread machine pan, place the milk, beaten egg, melted butter, water, vanilla pudding mix, bread flour, sugar, salt and yeast on Dough cycle.

2 When cycle is finished, remove the dough, and knead for 3 to 5 minutes. Roll out

3 Mix together the softened butter, brown sugar and cinnamon. Spread over dough then roll. Cut into 1/2 inch to 1 inch slices, and place in a greased 9x13 inch pan. Place in a draft-free space, and allow to rise until doubled.(1-2 hours)4 Preheat the oven to 350 degrees F (175 degrees C). Bake for 15 to 20 minutes.

NOTES: Make sure your egg, milk, water, and butter are warm (room temp). Also, the ½ package of pudding does not have to be exact, I put in a little bit more than half.

Frosting
1 stick of butter
1½ cups powder sugar
¼ cup (2 oz.) of cream cheese
½ tsp vanilla

PUMPKIN CREAM CHEESE SWIRL BREAD

1 (8oz) pkg cream cheese
¼ cup sugar
1 egg, beaten
1 ¾ cup flour
1 ½ cup sugar
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
¼ tsp nutmeg
1 cup canned pumpkin
½ cup margarine, melted
1 egg, beaten
1/3 cup water

Combine cream cheese, sugar, and 1 egg; mix until blended. Set aside. Combine dry ingredients, then add combine pumpkin, margarine, 1 egg, and water, mixing just until moist. Reserve 2 cups pumpkin batter and pour remaining batter into loaf pan. Pour cream cheese mixture over pumpkin batter and then rest of pumpkin batter. Cut with knife for swirl effect. Cook at 350 for 1 hour 10 minutes. Cool 10-15 minutes

PUMPKIN APPLE STREUSEL MUFFINS

2 ½ cups flour
2 cups sugar
1 Tbsp pumpkin pie spice
1 tsp baking soda
½ tsp salt
2 eggs 1 cup canned pumpkin
½ cup oil
2 cups apple, peeled and chopped

Topping:
2 Tbsp flour
¼ cup sugar
½ tsp cinnamon
4 tsp cold butter

Combine dry ingredients. In another bowl, combine eggs, pumpkin, and oil. Mix the dry ingredients into the pumpkin mixture until moistened. Stir in apples. Fill muffin cups ¾ full. Sprinkle with streusel topping and bake at 350 for 30-35 minutes.

Banana Bread

½ c. margarine
1 tsp lemon juice
1 c. sugar
2 c. Flour
2 eggs
1 ½ tsp baking powder
1 c. mashed banana (about 2 ½)
¼ tsp salt
¼ c. milk

Mix the margarine and sugar. Add the eggs. Then mix in the mashed banana, milk and lemon juice. Then mix in the flour, baking powder and salt. Pour in pan (only makes 1 loaf)
Cook for 30 min or until done at 350º

Snicker Salad

1 red apple
1 green apple
2 Snickers Candy Bar
1/2 c. whipping cream (whip till stiff) with 8 tsp of powdered sugar
6 oz. strawberry yogurt

Whip cream till stiff and add powdered sugar. Fold yogurt into whipped cream. Cut apples and snickers into bite size pieces. Fold pieces into creamy mixture.

Oriental Salad

1 pkg Top Raman noodles
4 green onions, sliced
½ tsp pepper
2 Tbs sesame seeds
¼ tsp salt
3 Tbs vinegar (apple cider)
½ C slivered almonds
2 Tbs sugar
1 head romaine lettuce
2 Tbs salad oil (canola)

In large bowl, combine noodles, lettuce, onions, and sesame seeds. For dressing, combine seasoning packet from noodles, vinegar, sugar, oil, pepper, and salt. Shake to mix well. Pour over salad mixture, stir in almonds before serving.

Easy Chicken Parmesean

Equal amounts bread crumbs and parmesean cheese (the Kraft in a bottle kind)
1 egg
Chicken breasts
Melted butter

Dip chicken in beaten egg, then dredge in bread crumb and cheese mixture. Place in 9x13 inch pan and drizzle melted butter over top.

Bake at 350 for 30-45 min depending on chicken thickness.

I put a little bit of shredded mozzarella on top of chicken during last 5 min of baking and serve with rotini noodles and spaghetti sauce. Have also had it with noodles and ranch dressing. So good and easy and makes good leftovers too.

Green Enchilada Quesedillas

1 can green enchilada sauce
2-3 chicken breasts
Shredded Cheese

Put in crockpot for 6 hours. Shred chicken. Put some shredded chicken, cheese, and juice from crockpot in half a tortilla. Fold over and fry up until crispy.

Serve with rice and salad.

Chicken Pineapple Sandwiches

Marinade: ½ cup soy sauce
½ cup Worcestershire sauce
½ cup brown sugar
1 tsp crushed garlic
¼ cup chopped fresh onion
1 tsp chopped fresh ginger
½ lemon, juiced

Mix marinade ingredients in saucepan over medium heat. Do not boil. Set aside a portion of marinade to be used as a dipping sauce during meal. Put chicken in warm marinade; let stand for at least an hour. BBQ chicken over medium heat 10-15 minutes each side. Dip in marinade between turnings. Dispose of used marinade.

Asian Beef and Noodles

1/4 lb ground beef
2 pkg Oriental flavor ramen noodles
2 cups frozen veggies
¼ tsp ground ginger
2 Tbsp thinly sliced green onion

Brown ground beef and season with 1 packet from noodles – set aside In skillet combine 2 cups water, veggies, noodles broken up, ginger and remaining seasoning packet. Bring to boil, reduce heat. Cover and simmer 3 minutes. Return beef and add green onions.

Taco Pie

1 package of Jiffy corn muffin mix
1 lb of ground beef
1 can of corn
1 can of tomato sauce
1 c of cheese (shredded)
1 can of seasoned, diced tomatoes (or 1 ½ c of salsa)
Top with sour cream

Brown ground beef and drain. In 13 x 9 pan, mix beef, corn, tomatoes (salsa), and sauce. In separate bowl make corn muffin mix according to instructions. Throw cheese in corn muffin mix, then layer that on top of the beef mixture. Throw all in oven at 350 for 20-30 minutes. Make sure topping is cooked through

Aunt Lue’s Red Roast

Chuck Roast
1 Can of tomato soup
Salt and pepper

Cook on low for 8-10 hours Pour juices into saucepan and thicken with cornstarch to make the gravy for mashed potatos.

Yummy Juicy Roast

Roast
1 can cream of mushroom soup
1 package onion soup mix
1 can cut mushrooms with juice (I leave the mushrooms out)

Low in crockpot 6-8 hours

Mostacelli Casserole

1 lb hamburger
1 green pepper
1 onion
1 clove garlic
1 Can spaghetti sauce
1 can tomato paste
1 can diced tomatoes
1 pkg rotini noodles
Grated mozzarella and parmesan

Cook rotini noodles Brown beef and sauté onion, green pepper and garlic. Layer noodles, meat cheese, noodles meat cheese in 9x13 Bake 350 for 30 min.

Upside Down Pizza

1 lb hamburger
green pepper to taste
1 ½ c. mozzarella cheese or Colby cheese or both
2 eggs
1 c. flour
1 c. pizza or spaghetti sauce
1 c. milk

Brown hamburger with green pepper (and onion if desired). Spread in 9X13 pan. Cover with cheese. Pour pizza sauce over. Beat eggs, milk, and flour and pour over top. Bake 400° for 30 min.

Sheppard’s Pie

1 lb. Hamburger
Mashed Potatoes
1 onion, chopped
Grated Cheese
1 can Tomato Soup
1 can Green Beans

Boil 5 medium potatoes and then whip into mashed potatoes. Brown ground beef with onion. Drain. Stir in tomato soup and green beans. Simmer for 5 min. Put in baking dish, and then spoon potatoes on top and sprinkle with cheese. Cook for 20-30 min at 350º

Strip Steak Polynesian

4 Tbsp. soy sauce
2 cloves garlic, minced
2 tsp. honey
4-6 oz. strip steaks

Combine first 3 ingredients. Marinate the strip steak in the mixture app. One hour in refrigerator. Preheat George Foreman. Place strips on grill and close lid. Grill for 6 minutes, open grill, add rest of the marinade sauce to the top of the steaks. Close lid. Grill for 1 min. Open and serve on bed of rice. Marinate steak for 1 hour

Stuffed Shells

1 lb Ricotta Cheese or cottage cheese
8 oz mozzarella cheese
2 eggs
4 crushed saltine crackers
1 ½ tsp parsley
½ tsp salt
Dash pepper
2 cups spaghetti sauce
Parmesan cheese

Pour half sauce on bottom of 9x13 pan. Stuff cooked shells and put in pan. Pour rest of sauce over top and sprinkle with parmesan cheese

Ham Fried Rice

2-3 c cooked rice
ham, chopped
¼ onion, chopped
2 eggs, scrambled
½ c peas
soy sauce

In skillet, saute onions. On medium heat, add ham, until a little browned. Add eggs and peas. Mix in rice. Pour soy sauce in and stir, add more to taste. (Alternate ingredient amounts to preference.) Same recipe can be used for ramen chow mein, just use ramen noodles instead of rice and cook beforehand as directed and add any other meat desired.

Lemon Grilled Salmon

2 tsp snipped fresh dill or ¾ tsp dill weed
½ tsp lemon pepper seasoning
½ salt
¼ garlic powder
1 lb salmon fillet
¼ cup packed brown sugar
3 Tbsp chicken
3 Tbsp vegetable oil
3 Tbsp soy sauce
3 Tbsp finely chopped green onion
1 small lemon, thinly sliced
2 onion slices

Combine all ingredients except onion and lemon slices. Pour over salmon and cover and refrigerate for 1 hour turning once. Drain and discard marinade. Place salmon on grill (with foil) and grill over medium heat. Arrange lemon and onion slices over the top. Cover and cook for 15 to 20 min or until fish flakes with a fork.

Cranberry Pork Roast

1 (2.5 pound) boneless pork loin roast
½ cup orange juice
¼ teaspoon ground cloves (I do a little less)
1 (16 ounce) can jellied cranberry sauce
1 teaspoon dry mustard
¼ brown sugar
2 tablespoons cornstarch
2 tablespoons cold water

1 Place pork roast in a slow cooker. In a medium bowl, mash cranberry sauce; stir in sugar, cranberry juice, mustard and cloves. Pour over roast. Cover and cook on low for 6-8 hours or until meat is tender.

2 Remove roast and keep warm. Skim fat from juices; measure 2 cups, adding water if necessary, and pour into a saucepan. Bring to a boil over medium-high heat.

3 Combine the cornstarch and cold water to make a paste; stir into gravy. Cook and stir until thickened. Season with salt. Serve with sliced pork.

Pizza on the Grill

1 (.25 ounce) pkg active dry yeast
1 cup warm water
1 pinch white sugar
2 tsp kosher salt
1 Tbsp olive oil
3 1/3 cups flour
2 cloves garlic, minced
1 Tbsp chopped fresh basil
½ cup olive oil
1 tsp minced garlic
½ cup pizza sauce (homemade or store bought)

Toppings:
1 cup chopped tomatoes
¼ cup sliced black olives
¼ cup roasted red peppers
2 cups shredded mozzarella cheese
4 Tbsp chopped fresh basil
Or whatever topping you want

In a bowl, dissolve yeast and sugar in warm water. Let sit for 10 minutes or until frothy. Mix in salt, olive oil, and flour until dough pulls away form the sides of the bowl. Turn ontl a lightly floured surface. Knead until smooth, about 8 minutes. Place dough in a well oiled bowl, and cover with a damp cloth. Let rise until doubled, about 1 hour.

Punch down and knead in garlic and basil. Let rise for 1 more hour, or until doubled.

Preheat grill for med-high heat. Heat olive oil with garlic for 30 seconds in microwave. Set aside. Punch down dough and divide in half.

Form each half into an oblong shape 3/8 to ½ inch thick. Brush grate with garlic flavored olive oil. Carefully place dough on hot grill and close lid. The dough will begin to puff almost immediately, only needs a few minutes. When the bottom crust has lightly browned turn over and remove from grill. Pour sauce, cheese and selected toppings over the already cooked side. Place back on the grill and close the lid, cook until the cheese melts. Works best if the sauce and toppings are heated before hand ie grill or saute onions, tomatoes, peppers.

Scalloped Potaotes

4 cups thinly sliced raw potatoes
3 TBS margarine
2 ½ TBS flour
1 ½ tsp salt
½ tsp paprika
2 ½ cups milk
1 TBS chopped onion
1 can cream of chicken
1 ¾ grated cheddar cheese

In saucepan, melt margarine. Add flour salt, paprika, milk, and onion. Stir and cook until thickened, then add soup and 1 cup cheese. Put ½ of potatoes in casserole dish and cover with ½ the sauce. Then add remaining potatoes and remaining sauce. Bake covered 1 hour at 350, then cover with rest of cheese. Bake uncovered for 30 more minutes.

Twice Baked Potatoes

3 large potatoes
½ cup sour cream
¼ cup milk
2 Tbsp butter
¼ tsp salt
¼ tsp pepper
½ cup shredded cheese
Green onions
Bacon Bits

Bake Potatoes at 350 for 1 hour.Allow to cool 10 mins. Slice in half and scoop out. Add potatoes to mixture. Then put back in shells and top with onions, cheese and bacon. Cook for 15 more minutes.

Potato Casserole (Funeral Potatoes)

6 Potatoes
1 can cream of chicken
½ pint sour cream (1 cup)
1 TBS onions

Boil potatoes till soft. Grate them into 9x13 pan. Mix sauce and stir into potatoes. Top with cheese.Bake at 350 for 20 min or until hot and bubbly

BBQ Corn on the Cob

Run corn with olive oil and sprinkle with salt and pepper. Put on grill about medium high heat. Turn every 2-3 minutes for about 10 or until done. You will see the color of the corn change.
