Meatball Sandwiches

Meatballs
Hoagie rolls
Spaghetti sauce
Mozzarella cheese

Put meatballs in the sauce, heat up. Put mozzarella cheese on rolls open rolls and broil for a few minutes. Put meatballs on rolls and serve with chips, fruit salad, and veggies and dip. I like to make the meatballs in the morning and then plop them in the pot with spaghetti sauce and put it in the fridge till right before dinner

Meatballs
11/4 lb ground beef
½ cup breadcrumbs
½ cup kraft parmesan cheese
1 egg
1 tsp worchestire sauce
Salt and pepper
Shake of garlic powder

Mix together and form balls (I make mine about the size of a golf ball). Place on baking sheet with edges and bake at 450 for 10-15 min depending on meatball size. Let them cool for a few minutes then add to a pot of spaghetti sauce.

Updated Shepherd's Pie

I've always hated shepherd's pie and I really like this.

1 1/4 lb red potatoes
3 gloves garlic
3/4 c. sour cream
1/2 c. shredded cheddar cheese
1 lb ground beef
2 TBS flour
4 c. frozed mixed veggies
3/4 c. beef broth
2 TBS ketchup

1. Cover potatoes and garlic - bring to boil. Drain, add sour cream and mash. Stir in 1/4 c. cheese.
2. Preheat oven 375. Brown meat. Stir in flour; cook 1 min. Add veggies, broth and ketchup. Cook 5 minutes.
3. Spoon mixture in 8x8 dish. Cover with mashed potaotes. Bake 18 min - sprinkle 1/4 c. cheese on top and bake another 2 minutes.

Megan's Lasagna - EASY & YUMMY

9 lasagna noodles
1 16 oz. cottage cheese
1 26 oz. spaghetti sauce
1 lb hamburger
2 eggs
seasoning salt
grated cheese

1. Boil noodles
2. Brown hamburger and add spaghetti sauce
3. In bowl combine eggs, cottage cheese, & seasoning salt
4. In 9x13 pan layer 3 noodles, 1/3 of hamburger mixture, and 1/2 cottage cheese mixture. Spinkle with cheddar cheese. Then layer again. End with noodles, hamburger mixture and cheese.
5. Bake 375 for 30 minutes - covered

Pretend Swiss Steak

I don't know why it's called this but our mom used to make it growing up

1 lb ground beef
1/2 c. flour
2 c. water
2 beef bouillon cubes
salt and pepper

Thaw out hamburger and salt and pepper. Divide into 4 patties. Coat with flour and brown on both sides. (I use oil in an electric skillet) Boil water and add cubes. Pour over meat. Simmer 15 minutes or until cooked. Take patties out and add flour to juice to thinken for gravy. Add patties back in and heat through. Serve with mashed potatoes.

Asian Beef and Noodles

1/4 lb ground beef
2 pkg Oriental flavor ramen noodles
2 cups frozen veggies
¼ tsp ground ginger
2 Tbsp thinly sliced green onion

Brown ground beef and season with 1 packet from noodles – set aside In skillet combine 2 cups water, veggies, noodles broken up, ginger and remaining seasoning packet. Bring to boil, reduce heat. Cover and simmer 3 minutes. Return beef and add green onions.

Taco Pie

1 package of Jiffy corn muffin mix
1 lb of ground beef
1 can of corn
1 can of tomato sauce
1 c of cheese (shredded)
1 can of seasoned, diced tomatoes (or 1 ½ c of salsa)
Top with sour cream

Brown ground beef and drain. In 13 x 9 pan, mix beef, corn, tomatoes (salsa), and sauce. In separate bowl make corn muffin mix according to instructions. Throw cheese in corn muffin mix, then layer that on top of the beef mixture. Throw all in oven at 350 for 20-30 minutes. Make sure topping is cooked through

Aunt Lue’s Red Roast

Chuck Roast
1 Can of tomato soup
Salt and pepper

Cook on low for 8-10 hours Pour juices into saucepan and thicken with cornstarch to make the gravy for mashed potatos.

Yummy Juicy Roast

Roast
1 can cream of mushroom soup
1 package onion soup mix
1 can cut mushrooms with juice (I leave the mushrooms out)

Low in crockpot 6-8 hours

I serve with: Scalloped Potatoes

Mostacelli Casserole

1 lb hamburger
1 green pepper
1 onion
1 clove garlic
1 Can spaghetti sauce
1 can tomato paste
1 can diced tomatoes
1 pkg rotini noodles
Grated mozzarella and parmesan

Cook rotini noodles Brown beef and sauté onion, green pepper and garlic. Layer noodles, meat cheese, noodles meat cheese in 9x13 Bake 350 for 30 min.

Upside Down Pizza

1 lb hamburger
green pepper to taste
1 ½ c. mozzarella cheese or Colby cheese or both
2 eggs
1 c. flour
1 c. pizza or spaghetti sauce
1 c. milk

Brown hamburger with green pepper (and onion if desired). Spread in 9X13 pan. Cover with cheese. Pour pizza sauce over. Beat eggs, milk, and flour and pour over top. Bake 400° for 30 min.

Sheppard’s Pie

1 lb. Hamburger
Mashed Potatoes
1 onion, chopped
Grated Cheese
1 can Tomato Soup
1 can Green Beans

Boil 5 medium potatoes and then whip into mashed potatoes. Brown ground beef with onion. Drain. Stir in tomato soup and green beans. Simmer for 5 min. Put in baking dish, and then spoon potatoes on top and sprinkle with cheese. Cook for 20-30 min at 350º

Strip Steak Polynesian

4 Tbsp. soy sauce
2 cloves garlic, minced
2 tsp. honey
4-6 oz. strip steaks

Combine first 3 ingredients. Marinate the strip steak in the mixture app. One hour in refrigerator. Preheat George Foreman. Place strips on grill and close lid. Grill for 6 minutes, open grill, add rest of the marinade sauce to the top of the steaks. Close lid. Grill for 1 min. Open and serve on bed of rice. Marinate steak for 1 hour

Tara's Meatloaf

1 ½ lbs. hamburger
2 eggs
1 pkg. onion Soup Mix
2 c. bread crumbs - about 3 slices of bread in the blender
½ c. brown sugar
½ c. ketchup

Mix hamburger, soup mix, bread crumbs and eggs. Grease square pan (or bread loaf). Spread brown sugar on bottom of pan and add ketchup on top of brown sugar. Pat down hamburger mix.
Cook for 1 hour at 320º
